I had originally planned to do a 22 hour fast, but then i got busy and it turned into a 24 hour intermittent fast instead. My fasting window was from 4pm yesterday afternoon until today 4pm afternoon.As soon as my fast was over, I was in the kitchen moving around like a working ant. It was food time and I was getting excited to chow down.Same as today, usually after a fast, i feel refreshed and not ravishingly hungry, but i do get super excited for food,because duh!!!--I'm human,food nourishes, and it is ohhhhhhh so good...lol ^^.Anyways, today I decided to cook my GO-TO MEAL: Spicy Tomato and Rice Dish.I love making this meal because it is super filling and fast and easy to make. I am so not skilled in the cooking department, but i try my best. I am one of those cook-to-live-and-make-sure-your-cooking-does-not-kill-anyone type cooks. I'm being 50% serious here..lol.Below is my simple recipe. All you need are a few simple ingredients and less than 10 minutes prep. time:
Ingredients Needed
Minute Rice Ready to Serve Cups (Brown and Wild Rice)-2 containers
Diced Tomatoes and Green Chilies (any brand)-1 can /10oz *
1 Large Egg
chopped onions (any variety such as red,white,green,etc.)- 1/2 cup
mushrooms- 1/2 cup
Serves 1-2 (depending on how hungry you are..lol!)
* NOTE: I do not add any extra salt or seasonings to my meal because i feel that the diced tomatoes and green chilies have more than enough sodium to add to the flavor of the meal.Also, if spicy is not your cup of tea, you can add 1 can of Regular/Plain Diced Tomatoes without the green Chilies.
Cooking Instructions
Step 1- Chop the onions and mushrooms into desired sized pieces, then spread evenly on a dinner sized plate.
Step 2- Crack one egg open onto the center of the plate with the onions and mushrooms.Heat in the microwave for about 1 1/2 to 2 minutes. The cooking time depends on how well done you prefer your egg to be (runny or well done yolk).
Step 3- In a deep bowl, combine the egg,onion,and mushroom mix with the 1 can of diced tomatoes and chilies
Step 4- Remove the lids on the Minute Rice cups and place the 2 side by side in the microwave for 2 minutes.
Step 5- Once the rice is done, dump it into the bowl with the egg,onion,mushroom, and tomato mix and mix together with a spoon.
The dish is now ready to eat!
